Inilah Makanan Murah Meriah Peraih Bintang Michelin Beberapa waktu lalu, mie ayam saus Hong Kong racikan kedai Liao Fan di Singapura berhasil meraih predikat bintang Michelin.
Hal tersebut membuat sajian lezat kreasi seorang koki pria bernama Chan Hon Meng itu dijuluki sebagai makanan berkelas dengan harga paling murah, yakni hanya 2 dolar Singapura, atau sekitar Rp 20.000 saja.

Meng sendiri sebelumnya tidak mengetahui apa itu bintang Michelin, kecuali sesekali mendengar bahwa hal tersebut merupakan salah satu penilaian tertinggi di dunia kuliner.
Bahkan, Meng sempat menanggapinya sebagai lelucon hingga akhirnya ia sadar bahwa semakin banyak atensi tertuju pada kedai miliknya yang berbarengan dengan kian meningkatnya jumlah konsumen berebut menyantap nasi dan mie ayam buatannya.

Kini, setelah kedai miliknya masuk dalam daftar rekomendasi tempat makan oleh Michelin, Meng pun ditawari oleh grup usaha kuliner papan atas di Asia Tenggara, Hersing Culinary, untuk membuka cabang kedua yang lebih besar di sekitar kawasan Chinatown.
Lokasi kedua kedai Liao memiliki interior yang lebih luas dan modern dengan kapasitas 80 kursi, serta area layanan take-out terpisah. Pada pembukaan perdananya, antrian panjang tampak mengular di depan kedai tersebut dan berhasil menghabiskan stok tidak sampai sore. Sekilas tampilannya mirip dengan sajian mie ayam di Indonesia, namun tidak menggunakan mie tepung, melainkan bihun yang direbus cepat berkali-kali dalam kuah kaldu ayam.
Setelah itu, bihun ditambah dengan sawi rebus, potongan ayam panggang, dan saus Hong Kong yang terdiri dari racikan minyak cabai, bawang putih dan bawang merah, serta garam lada.
Cabang kedua Kedai Liao Fan
Nilai unggul dari mie ayam saus Hong Kong ini adalah kesegaran pada seluruh bahan bakunya, termasuk bihun yang dibeli dari produsen lokal setiap harinya. Untuk ayamnya pun, Meng hanya menggunakan ayam kampung yang dibeli dari peternakan lokal di kawasang Pulau Gelang. “Saya memasak apa adanya, tidak ada trik ataupun rahasia khusus. Saya memasak dengan tulus dari bahan-bahan segar terbaik,” ujar koki kelahiran Malaysia itu.
